Cambridge outing and food food food

Jon came home from work yesterday morning to find me still in bed. For every normal person that would be normal, to still be in bed at 10.30 am on a Saturday. But since Jon was up at 5.30 for work both Sat & Sun he was shocked to find me in bed. He was also hyper on 4 cups of coffee so he had this plan to take me to Cambridge. I had plans to study and prep food and bake bread, but they that could wait right…?
So it’s Sunday now and I have officially 4 days left at work. Friday I will be unemployed. Not looking forward to the whole job hunting thing, but it might make way for something new and interesting. I am trying to stay positive and not worry too much.

I started cooking. Emma at work, her friend went to Thailand and went on a cooking course. This is the recipe she got there for authentic red thai curry. With homemade red curry paste.

I cheated a bit with the paste. You’re suppose to use a mortar, but I just made it in the food processor.

Mmm it turned out really nice. Jon couldn’t eat it though, it was too hot he thought. And I didn’t even use half the paste I was suppose to use. :D

Sunday thoughts

So, it’s Sunday again. I’m looking ahead at a full working week. But my last for this company. The week after I finish on the Thursday along with all my other colleagues at the advice centre, because it’s closing down. We did not have the funding come through that we tendered for. It’s unfortunate for P’boro coz I think the services we provide are very valuable for a lot of people. But that’s politics for you…
Even though it puts me and Jon in a more tight situation I’m not overly worried which is a relief. I will take some time finding a new job, a new challenge and while doing that I will catch up with my web design course and do some other more useful things with my time. I am sure Jon will appreciate me doing all the dishes again as well… hehehe…
We’ve had some other options coming up recently that we have been considering, but no decisions have been made. But we are open for a relocation again. It might turn out that the circumstances now are not the best. So I will learn to practice patience, not my best quality but hey…
I’m also hoping my that my upcoming unemployment can give me some time to pick up my blogging again. I like blogging. I like sharing, I like summarizing for my own sake, I like writing and I like using my random photos somewhere. Here we go:


Started yesterday with a cheese toast. Haven’t had one of those in a while, because I have been trying to lose weight. But ONE can’t make that much of a difference, can it?


We made my favorite: baked butternut squash with rosemary & thyme (and we added sun-dried tomatoes) with parmesan and tagliatelle. YUM!
